The low carb craze isn’t safe from anybody trying to cash in. This new potato contains 30% fewer carbohydrates than a Russet baking potato. Well now, I couldn’t find any information on the typical carbohydrate content of a Yukon Gold (or any other similar waxy cultivar), but I’m guessing it’s a lot less than a Russet (one of the starchiest cultivars there is). Nevertheless, the development of this new cultivar is, in the opinion of the current author, an exemplary example of what can be developed without genetic modification.
