Researcher Abhaya Dandekar and his colleagues have altered the apple tree so that it storages higher levels of the sweetener sorbitol, and lower levels of sugar in its apples. Sorbitol has only 2.6 calories per gram, 45% less than fruit sugars such as sucrose and fructose.
